Midway through the pilot episode, Senku seasons the meal and tells Taiju: “It’s essential for preserving food. It’s the greatest discovery of primitive humans.” A line tossed off in passing that actually hides one of the material conditions for any pre-industrial civilization: without preservation, no storage; without storage, no settling down.
The subject in depth
The core principle is simple: stop bacteria, yeasts, and molds from multiplying by taking away the water they need. This physical quantity is called water activity (written a_w), which measures the free water available in a food, on a scale from 0 (bone dry) to 1 (pure water). Fresh meat sits at 0.99; below 0.90, most pathogenic bacteria stop multiplying; below 0.85, molds are halted; below 0.60, a food reaches a state of long-term preservation (dry-cured ham, crackers, powdered milk) [Web] .
Four primitive methods exploit this mechanism. Curing adds salt: by osmosis, water leaves the bacteria to equalize ion concentration, and the cell plasmolyzes. Drying physically removes water (sun, wind, hot smoke). Smoking combines drying with the antimicrobial action of phenolic compounds in the smoke. Fermentation acidifies the environment (via lactobacilli, yeasts, or acetic bacteria), which inhibits pathogens that can’t tolerate acid.
Sugar works through the same osmotic mechanism as salt, at a higher concentration: it’s the principle behind jams (a_w around 0.80) and candied fruit (a_w below 0.70). Humanity discovered this principle empirically, and only understood the underlying microbiology in the 19th century with Pasteur and germ theory [Wikipedia] .
